Chef’s Specials in Wailua: What’s New at Naisla

Something New From the Kitchen

The main menu at Naisla reflects the dishes and flavors our guests return for, but our specials give the kitchen room to explore something new. They may begin with an ingredient at its best, a new preparation, or an idea the chefs have been developing together.

For guests deciding where to eat in Wailua, the specials offer a chance to experience a dish that may only be available for a short time.

Shaped by the Season

Kauaʻi’s seasons bring changes in produce, seafood, and the ingredients available to our kitchen. Our chefs respond to what is fresh and inspiring, building specials that feel connected to the moment while remaining true to Naisla’s style.

Japanese and Italian influences often meet in these dishes through careful technique, balanced flavor, and a respect for each ingredient.

A Place for the Kitchen to Create

A special is more than an addition to the evening’s menu. It gives our culinary team an opportunity to test new combinations, refine an idea, and share something outside the familiar rhythm of regular service.

Some specials are light and ingredient-driven. Others are richer dishes intended to anchor the meal. Each one is developed with the same care as the permanent menu.

What to Expect During Your Visit

Our chef’s specials change regularly and are offered while ingredients and availability allow. Your server will be happy to explain the evening’s selections and help you choose a cocktail or another dish to enjoy alongside them.

Because these dishes are not always available for long, each visit may bring something different to the table.
